Mason Distillery’s Shibui is single-distilled in stainless steel or growing older in manzanilla and fino barrels. More agency on the nose, with milk chocolate, dried cranberry, slightly bitter cherry notes, hints of toffee, and muted wood spices. Citrus freshness, vanilla fudge, ginger snap spiciness, licorice, walnut, and fresh fig, with a lime and green melon finish, influence the lighter-style sherries.

Tasting Notes

Aroma: cinnamon-topped peaches and cream; Earl Grey tea with softer notes of chocolate and pecan.

Palate: Bergamot and coconut complement tropical fruit, raw honey, and banana, with a long-lasting spicy oak aftertaste.
