About The Macallan:
In 1820, Alexander Reed sowed the fields around the rented house with barley. He set up the first licensed distillery, which was destroyed by fire in the 15th century. Named after the ancient church by Macallan, situated on a hill above the banks of the River Spey. Reed fermented and distilled his surplus grain on winter days into whiskey. It was first sold to travelers passing through the city.
The Macallan Estate has 370 acres, 95 of which yield minstrel barley (one acre produces 2.5 tons per year). (Enough to produce 1,800 bottles of The Macallan). Also, the distillery contracts with farmers to buy barley that is low in nitrogen and high in starch, resulting in a rich and oily whiskey.
After harvesting, the barley is crushed in one of two mash tuns. Then the process takes four to eight hours. Wheat must undergo fermentation with specially cultivated yeast before going through the Macallan copper-pot stills twice. Copper-containing steel acts as a catalyst. It increases the formation of sweet esters while reducing impurities such as sulfur.
The curiously small stills—”some of the smallest stills in the Scotch whiskey industry,” according to production manager Alexander Tweedy—create a whiskey with a heavy, oily flavor. After distillation, Macallan distillers remove the head and tail of the whiskey and collect about 16% spirit to fill casks for maturation. This “cut,” the highest of any Scottish distillery, produces a fuller and richer whisky.
Malt whiskey is made from malted barley. Grain whiskey uses other grains, such as corn or wheat. Separate distilleries work together to blend whiskey.
